How We Brew

No Shortcuts.
Ever.

Our 10-barrel brewhouse isn't a teaching tool — it's a professional production facility. Every batch our students brew meets the same standards you'd find at any respected craft brewery in the region.

01
Milling & Mashing

Fresh-milled grain, multi-step temperature mashing, and precise wort collection.

02
Boiling & Hopping

High-efficiency kettle, whirlpool hopping, and late dry-hop additions for aroma.

03
Fermentation & QA

Glycol-controlled unitanks, full lab testing, and sensory panel sign-off before packaging.

04
Canned On-Site

In-house canning line. 12 oz and 16 oz formats. DO-monitored for freshness.

Barrel Program

Oak-Aged & On-Site

We maintain an active barrel aging program — bourbon barrels, wine barrels, and new American oak — for limited-edition releases that showcase what our students are capable of when given time and latitude. Ask about our current barrel-aged offerings in the tasting room.
